I can only talk about Spain with authority and not the others, but unlike other countries, say US, where being Catholic is just one among many available choices, traditionally Catholicism had the religious monopoly in Spain so you could choose between being a Catholic or a non religious person raised by, like it or not, Catholic values. This is a mostly inseparable mixture. So, as a result, even Spanish agnostics/atheists are heavily influenced by Catholic values, moral, and culture.
However, this does not mean that people are still practicing Catholics. Adherence to Catholicism has been declining steadily since the '80s, and I would say it has been on life support since '00s. If you attend Sunday mass at any church in Spain you will mostly find people over 60 years old.
