My guess is that if you want to get a random sample that's big enough for you to be able to notice examples of the two extremes ( very light and very dark people) you can't only base yourself on celebrities originating from said countries. With such a small sample you'll just get the most prevalent phenotype.

I think many Spanish in London are actually lighter in general than those from Spain, immigrants who come from Spain to London tend to be more middle class and university educated, many work in bars and restaurants but they are doing that to improve their English and as a way of avoiding big unemployment back home. I have lost count of the amount of Atlantid or subnordic looking Spaniards i have seen around London but as a group they are probably 20% lighter than the average in Spain. Italians are darker because they are mainly from the South, i think Spaniards come from all over Spain though i dare say the Berid types seem less common except among tourists.
