They're terrible with flavouring, using very little and think the umu/hangi provides enough flavour. Additionally, they use only a few base ingredients. Basically, pork, chicken, fish and a couple of root vegetables. And essentially, this is all steamed-slow cooked. This is my experiences at multiple Maori, Samoan, Tongan and Nuiean weddings or birthday celebrations.
Hell, at one wedding, as the vows finished and we all moved in for meal, we found one part of the family had stolen all the meat and prepared food and left guests with nothing but some basic greens, bread and corned beef
