I didn't checked that on the wikipedia page of each Venezuelan state there is a table of racial census of that state (based on self declaration). Just to make clear that I don't take it very seriously because is based on self declaration, but all I can say is that those who declare themselves as mestizos must be a mix of truly Euro/Amerindian mestizos and triracials (in an interior state like Guarico, most of those triracials must be mestizo-leaning triracials), and those who declare themselves as whites, are not all truly white people (85% Euro or above) but it must be mostly people who are at least 70% Euro or above (including some real whites, of course). So I'm going to include those racial census figures on the thread of each state, as I already did in the thread of Anzoategui state. Always making it clear that the standards are like described in this paragraph (for the records).

Guarico's racial census based on self declaration (2011):

    Racial composition Population %
    Mestizo 451,650 60.4
    White 245,274 32.8
    Black 43,368 5.8
    Other race 7,447 1.0

are there stats like this for other LATAM countries? For some reason when I look these things up they often combine White and Mestizo which makes no sense to me.

No, these loose standards are only in the Venezuelan census based on self declaration, that I take them with a great of salt. As I say, those who declare themselves as "white" are very likely mostly people who are 70% Euro or above. And those who declare themselves as "mestizos" must be people who aren't very black admixed, nor white, but mixed people who are either triracials in diverse proportions or actual mestizos.

I heard about Latin American countries that count their mestizos and whites altogether, yeah!

But independently of all of that, there are also people, like in this forum, and even some studies, who try to make more serious estimations of the actual percentage of whites in these Latin American countries.
