Dwarfes and elves have not fought against the Uruk-hai, only humans from Rohan. The Uruk-hai were just a little bit more than the half Isengard Army, but dunlendings, wargs, orcs from Misty Mountains were also numerous. In the movie these orcs who had ridden on wargs were mountain orcs from Misty Mountains not uruks. The Isengard Army was misrepresented in the movie, it was not full uruk-hai in the book, the real number of uruks were around 6000-6500, others so these dunlendings, mountain orcs etc were much weaker than the Rohan units.
Dwarfes and elves were not puny, but the strongest warriors. For example in the First Age, Glorfindel killed 2 balrog at same time, he is a real terminator and the strongest fighting hero in the complete world. Glorfindel could have beat the balrog of Moria very easly.

I'm aware dwarves are supposed to be broad shouldered heavy-muscled chads, but lez be honest, the ones in the movies did look kinda puny compared uruks.

Not really unrealistic, because the riders of Rohan had tons of combat experience against the orcs of Misty Mountains and dunlendings, and these uruks were just newbies in general because the Isengard Army was created very quickly, so the physical force is not everything.

Who cares the movie? The books are the original Lotr, in the books the uruks were not stronger or taller than humans, but they were such strong and tall like humans and they used human weapons, that's why they were more powerful than average weakly orcs and i have already explained everything about uruks. Saruman wanted everything too quickly.

It seems you don't understand this complete Isengard vs Rohan war. Forget about the movies, because Tolkiens original world is different.

Humans have already lived in Isengard before Saruman became evil, and these were loyal to him. According to Gandalf, when the uruks were created by dark methods, Saruman used human blood too, that's why they didn't afraid of the sun, and this is the reason why they used human weapons. The first subjects were obviously these isengard humans what i have mentioned earlier.
Saruman didn't revealed his plan, but everything was secret, so the Isengard Army was hidden, they have not fought against Rohan openly, just after when Saruman captured Gandalf, it was the moment when the war on Rohan has started. These uruks (who were such tall and trong than humans but not better) had no any combat experience (they have been hiding so far) unlike the rohirrim who used similar tactic like horse nomads: fire with bow, run, and returning back to fire again, or the typical calvary charges, these very useful against the slowly heavy armored Isengard troops thats why after a while they used pikes.
The Isengard siege works were not really useful, they had only battering rams, simple ladders, only the explosive mine was good. Saruman could not cast such spells what makes the sky dark (like Sauron did), so the trolls (basic siege units) from Misty Mountains could not reach the Helms Deep because the sun maked them stone.

Btw i love Isengard, this is one of my favourite lotr fraction, they are very powerful with good tactics, but you must see their weakness too.
