Default Does the name Guy is of Roman/Latin origin?

The French/Belgian name Guy. Like Guy Vanderveren etc.

Does that originate from the Roman/Latin name Gaius like in Gaius Julius Caesar?

Guido, Al Pacino's double-crossing brother whom he had killed comes to mind and Chris "Guido" Cuomo, governor Andrew Cuomo's brother.

    It's from Guido.

French pronunciation of Guy is different from the English guy which indeed sounds similar to Gaius/Caius.

It was originally a Germanic given name, known under various spellings ("Wido" or "Gweerder" and others).
It was introduced in Italy and Spain as "Guido".
In France and England, it became "Guy".
Not related in any way to Latin "Caius".

On the other hand, "Kaj" (or "Kai") used to be widespread in Northern Germany and Scandinavia, and is said to be a Nordic cognate of Caius (though no one is quite sure, there is still some debate about it).
