Red hair are probably from Steppe ancestry or something, and freckles don't even have to be from europe as I know austro-asiatic speaking people from India with negligible West Eurasian ancestry who have freckles.
Marrying outside one's caste is taboo as is, that too with a casteless foreigner it is fairly rare. And even if she did have a british ancestor, I don't think they'd just forget about it like that. She's a Gujarati Lohana afaik, and most colonial era mutts were from Goa, Bengal, or the South. Gujarati Lohanas are of Sindhi origin, and if Pashtuns and Kalashas can have a sizable minority of people with light hair, I don't see any reason to believe why upper caste Indus Valley pops cannot have a few individuals here and there with these traits as well.

Indians who have British Colonial ancestry usually will identify themselves as Anglo-Indian and tend to be Christian with Western names, not Hindu.

I would've guessed her to be half British half Indian anyhow, but somehow I'm guessing she's not. Her facial features look very Indian.

I'm still impressed with her features regardless.
I mean we can't discard a possibility of having a tiny bit of European ancestry. Even if they don't identify as such. It would be nice to her DNA results.

While anything is possible it would be highly unlikely that someone who is Hindi with an Indian surname would have British ancestry because women in the past like that would not be accepted in that community. Women that partnered British became Christian and a different and separate population was created in India. The majority of Anglo-Indians left India when they got the opportunity and went to Britain, Australia and Canada.

Another thing to take note is that these recessive traits occur because of both her mother and father as you need both copies of these recessive genes for blue eyes and also red hair so it's just a rare occurrence of both parents having these recessive traits to pass it on to their offspring. There would be Indians that carry these traits but because they are rare in the Indian population the chances of two people having them and marrying is extremely rare. Recessive traits are more likely to be expressed in populations that are smaller and more closed off like the Kalash.

I never been to Urop so i can't tell, but maybe as a partialy gypsy east european, or in dagestan or something?

Yea perhaps those parts of Russia and Degestan, but she would prob be an odditty in those places for the observant eye.
