    The americas developed completely in absence of Mesopotamia. Not sure if you know but those crops that might be so typical of european cuisine today like tomatoes, potatoes, corn, squash and even beans were not known in europe at all until the discovery of America.
    what kind of spices do come from the Americas though? AFAIK i only know Vanilla, i also used to think Sugarcane was from the americas too, but it wasnt it seems.

    In fact, corn is a very special crop: the domestication of teosinte (ancestor of corn) was such that the plant was completely modified, giving rise to a new artificial species. Corn requires human intentionality to survive.

    Corn, the most cultivated grain in the world, is another of the greatest achievements of the Amerindians. Millennia and a lot of effort had to pass for its creation.

    The Mesoamericans called themselves "sons of corn", not only because it was the basis of their diet, but also because it is a plant product of human intentionality and represented evolution, and intentionality has allowed Homo-Sapiens to be a cultural and civilized animal.





    In Ancient Mexico, Mesoamerica/Anawak, a philosophical, scientific and spiritual proposal was developed aiming to explain who we are, how we came to exist and what is our purpose in life. Its name in nawatl is Toltekayotl, "Toltequity"; translated as "the art of living".

    Big sellout you are. You might as well call them latinos or hispanic . They are Indigenas Mexicanos.

    I really hate how europeans have failed to use corn or process the way amerindians and i guess most Latin Americans do? or was this knowledge also lost in mestizos? With applying nixtamalization to them to make them more nutrious and better digestable for humans, this process is literally unknown here, does it taste different or has a different structure or is it just that the hull of corn is disolved? We tend to make things like polenta out of corn or eat them in soup or salads etc. but we do not really process them correctly.
