What do you think of this ancient roman mosaic depicting a fruit basket including a pine apple ?

In all likelihood the object is simply a pine cone from a domestic pine tree. Columella and Apicius repeatedly write how pine nuts were a recurring item in Roman cuisine, and botanist Frederick Meyer has catalogued a whole series of pine cones and charred pine nuts from Pompeii and Herculaneum, both from habitation sites and from warehouses along the harbor.

That is not a pineaple.Its similar case to those inca "airplanes" and egyptian "lamps".
