The whole multiple course thing is an Europen habit that took me quite long to discover.
Even us in the Italian colonies have only a main dish and a dessert or digestive, but the plates are filled to the max and usually have a lot of variety. It is not strange for people to have pasta and rice in the same meal, with salad in the same plate. If we have soup, it is only soup.
Older people will drink coffee, mate, wine, cachaça or some jagermeister style bitter as a digestive, I liked sagú (tapioca pearls with wine) as dessert, with a cup of coffee.
The only russian-ish food I've eaten was when I made some beet kotleti inspired by that Life of Boris channel. I know a Russian restaurant in Buenos Aires and plan to visit someday, if for some stupid wartime reason it has not been closed or rebranded, but we in SA are not stupid to this point.
