I love Kristin Stewart, actually, I'd like to see her as Schneewittchen as well.

Thought of Zooey, as well. But someone mentioned she was a tad unidimensional, and I tend to agree with that.

And although Theron was chosen for the evil beauty role, and she may be a bit old now, I think she would've made a terrific Snow White herself, having seen her in raven hair back in her Aeon Flux days.

as would have Jennifer Connelly been about 5-7 years ago (she's in her 40's now, so I dunno). Jennifer Connelly did have the right look and personality, though.
