Default Why is my cheburek "bready"?

I tried two different dough recipes, and the same thing happens both times. The dough is too "springy" and refuses to be rolled flatter than about half a cm. It does not bubble significantly when I fry it, but forms a doughy, golden brown casing much like an empanada.

Here is one of the recipes I used: https://spoonuniversity.com/recipe/g...ebureki-recipe

I never made cheburek dough or sudaca similars, I used to make empanada dough a while ago..
From my experience, butter made the texture more like you described it, but when I used lard it became a bit more "airy".

Other than that, you should check the type of flour you use, if you leave the dough to rest and at what temperature you heat the oil up.

Some people have a talent for it and some not unfortunately, although my mother thought cooking to me, some of my Turkish meals don’t taste like her meals. (But still good)

My grandmother learned cooking from her mother in law. She was terrible, but my I don’t know anyone who can cook like my grandmother and the wifed of my great uncles, maybe you need an awful Turkish mother in law?

I almost had an awful Turkish mother in law. She gave her son enough issues that he pansied out of the promise to marry. Never again

Did she traumatize him? Was she overbearing and meddlesome?
