It happens. Honestly a lot of it is because pretty much from their teen years they are constantly made fun of for being short. I will say it's very annoying when men have a complex about this as if you were the one who personally hurt them about their height.

Societal norms and or personal preferences. Also, people in general desire things they don't have or naturally possess, its what makes that something or someone so valuable.

A short woman might desire a taller man.
A brunette might want to be blonde.
A woman with small breasts might desire to have a bigger bust.

Pretty much the same, I always dated around our average or taller, but never shorter. Although there are guys who prefer significantly shorter women than them (the male equivalent of op's friend) because they feel masculine and protective around them, they seem to be exception. I feel odd.

Height is a bit unpredictable. Children a lot of the time end up taller than both their parents. Lots of short women can have very tall children.

Don't care too much on what women demand. If you're confident and attractive enough, they will change their preferences to suit you. I'm 5'9, met with plenty of those "6 feet or above" type of women, and they were still interested in getting to know me. The last woman i was seeing was 1-2 cm taller than me, and she approached me first.
