I have a passion for Cheese, there isnt a cheese that I have come across yet that I haven't enjoyed (apart from processed stuff!) It has so many flavours and textures and is so versatile that it is my all time favourite food and one that our ancestors have relied upon as a staple in there diet for centuries! So please post your fav cheese here and share !

I'm dairy lover as well!
All cheeses from sheep and goat milk.
Locals:
Balkan kashkaval - yellow sheep cheese;
white (fetta type) sheep cheese;
yellow goat cheese;
white (fetta type) sheep cheese;
buffallo white cheese;

Imported cheeses:
Emental, Brie, Camembert, Edamer, French goat cheese, all Swiss cheeses I've tried and so on...Can't name them all now...

Well I'm still on my English cheese kick from last year though I haven't really been diligent in terms of finding new ones to try. But my absolute favourite has got to be Applewood Smoked Cheddar. I think I would commit a serious felony just to get a wedge if we one day had a shortage of it here.

The goat-cheese from Jamtland is world class. And for some reason I love most cheeses that is un-pastured.
