Actually , well it depends on region... but Turkish food is not very much spicy ..only southeast region use more spices may be because it was on trade route .Urban cooking use more spices (because it is available ),countryside cooking tend to rely on dairy and vegetables to add taste , they are more simple in ingredients but requiring skills (dough making and shaping, tendering meats , fermenting ,pickling, beating etc.)
Normally we use herbs more than spices , like minth ,thyme , basil ,spring onion ,garlic , dill , fresh coriander are most common ones .
we use nuts , walnuts , peanuts usually in deserts .
Cumin , black pepper , red chilly , powdered red chilly , cloves , dried currant are widely used spices whereas curry , turmeric , muskat and lots of other spices are pretty exotic even though they were known in palace (except curry )
mustard is also urban spice
