    The Catalan escudella is the first referenced soup in Europe. Apparently it was eaten every day by 14th-century Catalans.



    It's usually made with galets. I prefer them filled with something, mostly meat.

    Caldo verde, literally "green broth", is a typical soup from northern Portugal, eventhough it's common and eaten all over the country.
    It's made with potatoes, couve galega (also called "penca galega" or "coibe galega") - collard greens - and at least one slice of chouriço.

    If someone gives you caldo verde without chouriço you're free to insult their mothers.







    Purely rural soup, not the fancy crap others like to make.

    The phrase is widespread, we produce underwear with it:
