For example there are no chips in souvlaki in the new world and when you ask for mustard the people look at you funny. Also majority of Gyros shops in Australia are owned by Asians.

Imagine a Greek trying to serve Chinese street food - just won't happen
Never in my life have I seen an Asian serve Greek food of any kind in Canada/America. I have seen Albanians and Arabs serve Greek food though. I’m guessing it’s because they were at least somewhat familiar with Greek cuisine and Greek food would sell better than Albanian or Arabic food for commercial reasons. Because nobody knows what Albanian cuisine is.

Baklava is an old fashioned dessert in Greece which is not even common. There are thousands more pastries and desserts to chose from. You can only find in certain pastry/bakery shops baklava and even then you have to search quite a bit. While you find thousands of other pastries like the one below. In fact Greece has some of the best pastries in the world. But people are stuck on baklava and only name because it is also a Turkish. It is the equivalent of me saying that the Portuguese and Spanish cusine is all about couscous and nothing more.

Baklava not popular in Greece? You are losing it. It is still very popular, but yes there are many other pastries that Greeks love too such as Galaboureko, Loukamedes, Kourabedes, Halva, etc. also rice pudding, though not necessary a pastry but still ‘desert’…

Pastitsio (which is WAY more popular than moussaka, which in turn isn't Turkish only but in name). Minced beef, pasta, bechamel sauce >>>>>>>>>>>>>>>>>

Also, tylichto (aka wrap) with souvlaki (not gyro, they're different).

Greeks have really good food. Pastitsio is very good too. Never tried tylichto.
