    CHOCOLATE AND PECAN NUT COOKIES

    These cookies are slightly moist and soft.



    2 eggs
    1 cup brown sugar
    1/2 cup vegetable oil
    1 teaspoon vanilla essence
    2 cups flour
    1 tablespoon baking powder
    1/2 cup cocoa
    150g chopped pecan nuts

    Mix the eggs, sugar, oil and vanilla essence together in a bowl and stir until mixed. Add flour, baking powder, cocoa and pecan nuts. Mix together well and knead the dough by hand. If it is too sticky, add more flour. Roll into little balls just slightly bigger than a marble and press flat with a fork. The consistency is right if it does not stick to the fork.

    Bake for 20 min at 180 degrees Celcius.

    Ingredients

    1 small onion (diced)
    1 section ginger root (approx. 3cm long) either minced or chopped into tiny pieces
    4 cloves garlic (or garlic paste)
    2 potatoes (cubed)
    4 carrots (cubed)
    3 small fresh chillis (de-seeded and sliced) Caution: USE GLOVES!
    1/3 cup ground cashews (raw and unsalted)
    1 can diced tomatoes
    1 sachet tomato paste
    2 tablespoons curry powder (strength depends on how hot you like it - I use medium)
    1 cup frozen green peas (or fresh)
    1/2 green bell pepper (de-seeded and chopped)
    1/2 red bell pepper (de-seeded and chopped)
    1 can coconut milk


    Instructions:

    1. Boil the carrot and potatoes in a pot until tender. This decreases cooking time.

    2. Heat the oil in a skillet over medium heat. Stir in the onion, and cook until tender. Mix in ginger and garlic, and continue cooking 1 minute. Mix potatoes, carrots, chilli, cashews, tomatoes and tomato paste. Season with salt and curry powder. Cook for 5 minutes.

    3. Stir peas, green bell pepper, red bell pepper, cashew nuts and coconut milk. Reduce heat to low, cover, and simmer 10 minutes.

    4. Garnish with coriander (dhanya/cilantro) if desired.

    5. Serve with basmati rice

    Sweet Potato and Black Bean Stew



    Ingredients

    1kg sweet potato (peeled and cubed)
    1 onion (diced)
    4 cloves garlic (minced) or garlic paste
    1 red pepper (de-seeded and diced)
    1 can diced tomatoes
    1 can black beans
    1 cup water (or more if needed)
    1 tsp salt
    1 tsp sugar
    1 tablespoon unsweetened cocoa powder
    2 small fresh chilli (de-seeded and sliced) CAUTION: USE GLOVES!!
    2 tsp ground chilli
    1 tablespoon cumin seeds
    1/4 tsp ground oregano
    1 tsp cayenne pepper


    Instructions

    1. Preheat oven to 400 degrees F (200 degrees C). Line a baking sheet with baking paper, sprinkle a little olive oil and lay out the sweet potato in a single layer.

    2. Roast sweet potato until soft (20-25 minutes).

    3. In a pot combine onions, garlic, bell pepper, cumin, oregano, cayenne pepper, ground chilli, fresh chilli and cook until the onions are glassy and the mixture has combined well.

    4. Add tomatoes and water and bring to a simmer. Add salt, sugar, cocoa powder and simmer for 30 minutes. You can add more water to thin the mixture if you like.

    5. Add the sweet potato and black beans last. Simmer on low heat for another 15 minutes.

    6. Garnish with coriander (dhanya/cilantro) if desired

    7. Serve with rice

    Chickpeas and Spinach with Spaghetti



    Ingredients

    1 large bunch spinach chopped (rather over-estimate than under-estimate because spinach shrinks A LOT during cooking)
    6 large tomatoes (diced)
    2 can chickpeas (rinsed and drained)
    1 tsp fresh marjoram
    2 cloves garlic (minced)
    1 tsp chilli flakes
    1 tsp salt
    1/2 cup of vegetable stock
    2 sachets tomato paste
    2 tbsp olive oil
    grated parmesan cheese (optional)
    1/2 packet wholewheat spaghetti


    Instructions:

    1. Bring a large pot of water to the boil and add spaghetti. Cook until it is done (approx. 10 minutes).

    2. Heat some oil in a large pot and add the garlic. Stir until it is fragrant. Add tomatoes and chickpeas. Add salt, chilli flakes, vegetable stock, tomato paste and marjoram. Cook until it is heated through.

    3. Add the spinach. Things go quite quickly from this point on. Cook for about 1-2 minutes until the spinach leaves have wilted. You don't want to overcook the spinach.

    4. Serve with the spaghetti and sprinkle with parmesan cheese.

    Butternut, Samp (Hominy) and Bean Stew



    Ingredients:

    1/3 cup dried samp (hominy)
    1/3 cup dried speckled kidney beans (or red ones)
    1 onion (chopped and diced)
    500g butternut (peeled and diced)
    1 can diced tomatoes
    1/2 cup vegetable broth
    1 tablespoon chilli powder
    1 tablespoon cumin seeds
    2 cloves garlic (minced)


    Instructions:

    1. Bring a pot of water to the boil. Add samp (hominy) and beans. Boil until they are soft. This is a long process and can take anywhere up two hours. It helps if you've soaked the samp and beans overnight. Do NOT add anything to the water. Any ingredient mixed with the water will make the beans go hard.

    2. In a separate pot, boil the butternut until almost tender.

    3. Heat the oven to 200 degrees Celcius (400 Farenheit). Spread the butternut out on a cooking tray lined with baking paper, sprinkled with a little olive oil. Bake the butternut for approx. 20 minutes. Don't let it burn.

    4. Add all the ingredients into a separate pot and cook until heated through. (You've cooked the samp and beans already.)

    5. At the end, stir the butternut into the mixture.

    6. Garnish with sour cream or coriander (dhanya/cilantro) if desired.

    7. Serve with basmati rice.

    Lentils with Roasted Beet and Carrots

    This can be eaten as a main meal or side dish, hot or cold. I find it very filling so I eat it as a main.



    Ingredients:

    1.5 cups dry lentils
    6 medium beets (or 12 small ones)
    4 large carrots (or 12 baby carrots)
    1/2 cup chopped fresh basil
    1/2 cup feta cheese
    olive oil

    For the ailoi

    1/2 cup olive oil
    1/4 cup fresh lemon juice
    2 cloves garlic (minced) You can use just one clove of garlic, depending on your taste preference.


    Instructions:

    1. Cut the green tops off the carrots and beets. Scrub the beets and carrots to remove all the soil. No need to peel them.

    2. Cut the carrot in half (lengthways) and chop it into sections about 7cm long. They are right if they are roughly as thick and long as your fingers. Cut the beetroot into quarters.

    3. In a wide, ceramic roasting dish add about 2 tablespoons of olive oil. Put the beets and carrots in a single layer into the roasting dish. At 200 degrees Celcius, roast the vegetables for about 30 minutes. When you piece them with a fork they should be tender.

    4. Fill a pot with water and add the lentils. Boil the lentils until soft. Depending on which lentils you use this can be anything from 10 minutes to half an hour. Check the lentils regularly. They should be tender. If you cook them too long they will become mushy.

    5. In a separate bowl, add the garlic, lemon juice and olive oil together and whisk until the oil and lemon juice combine to make the aioli.

    6. Add the roasted vegetables to the lentils. Mix in the fresh basil and drizzle with the lemon juice-olive oil combinations (ailoi).

    7. Crumble the feta over the finished product and enjoy!
