I had been learning about Mayan and Inca gods Kukulkan and Viracocha for sometime 2 years ago, their non-human depictions are one important information I got. If you noticed, Kukulkan sometimes is a serpent swallowing a human, or a mans face protruding his tongue for human blood, himself has no body, and these are not the normal depiction of human.

Although Kukulkan was mentioned as a historical person by Maya writers of the 16th century, the earlier 9th-century texts at Chichen Itza never identified him as human and artistic representations depicted him as a Vision Serpent entwined around the figures of nobles.[8] At Chichen Itza, Kukulkan is also depicted presiding over sacrifice scenes.[9]
All the important sources that depict Quetzacoatl as human form are Codex Borgia and Codex Borbonicus, Codex Magliabechiano both originated around the time of Spanish conquest, from 1400ADto 1500AD. In aztec worship, Quetzacoatl was never a human.
