What's your favorite Ethnic Cuisine?

If I had to pick a single ethnic cuisine to eat for the rest of my life, it would likely be Italian. It's flavorful, fresh, and can be surprisingly light! Also I love tomatos and that really helps.

What about you? Any favorite dishes? Feel free to post recipes as well!

Runner ups for me would be: Japanese, Spanish, Chinese, German/Swiss, & Spanish. French is good but it can be a little too heavy on the cream.
