Here, I'll juxtapose mine with this Scotsman. Graham is probably NorthEast Scottish while I would be more similar to SouthWest Scottish :
North_Sea --20.05 %
North_Atlantic --19.83 %
----------------------------------
Fennoscandian--9.68 %
Italian -- 9.53 %
French---7.47 %
Central_Euro--7.36 %
East_Central_Euro--5.35 %
Basque--4.87 %
Iberian--4.69 %
Eastern_Euro--3.58 %
South_Central_Asian--3.20 % (this probably is not right)
etc...

Put your results through the tool I asked for, it seems like the main differentiating factor between AJs and SJs (compared to the group I'll call IJ, representing pre-Diaspora Jewry) is that Ashkenazim have more European farmer and Indo-European ancestry (both which I think is Balkano-Anatolian in origin), whereas Sephardim seem to be more North African. This makes sense comparing the migration paths of Ashkenazim and Sephardim:

I know I have north african DNA. My dna is wired. I get very different results on every calculator in gedmatch. Even FTDNA was a mishmash- They said I have max 10% levantine (combined with jewish heritage) but a lot of asia minor(and I mean alot- doesn't make any sence). Gedmatch can put me on 60-70% european or 40-50% depends on test. It can put me on 10% North african or 3%. The only similar results I got were from DNA.LAND , Genecove and Genplaza(62% southern european that splits between about 18% Balkan,30% Italian,14% Iberian, about 18-20% Levantine with some trace of turik, 16% Berber-north african). That also fits with my family phenotype (mostly Alpine-Meds(pan south euro, we are western shifted), but with some Dinarides (yugoslaven-balkan) and atlanto med (Iberians/Italians)..)
I really don't know what ends up with my dna.
I guess because I'm such a mixture it makes it hard on calculators... God knows..
I don't trust gedmatch so much... I prefer real tests like DNA.land or Ancestry or any other thing.
And look at my FTDNA Ancient origins.. only 6% non european and a lot of farmer(SW europe).. Doesn't get along with the thing you wanted me to do..

GEDmatch is pretty good at showing roughly where you are, genetically. Not as good for the specifics.
Those results are probably because Sephardim didn't go through a selection pressure (bottleneck) like Ashkenazi, so aren't as genetically distinct (that's why 23andme can say I'm Ashkenazi, but can't say you're Sephardi).
