I think I'm in the same boat as yours, but there was a time where the majority of the music I listened were East Asian.

I listen to music by men that's all I can say, these men tend to be mostly white or black.

My ear finds it challenging, to appreciate East and South Asian vocals (same said ear can easily appreciate the instrumental aspect)

I don't think so.
Personally, I love listening to music from races other than my own.
I like the classical music of Europeans.
I like Aramaic and Hebrew singing of the Psalms
I like the music of Americans who invented Rock and Ballad.
African-American music like RnB, Jazz and Gospel Music, I also like.
But I like listening to my own gender sing mostly because at least I know that I could also sing at the same pitch. I like listening to women sing too but I don't usually listen to women's songs because I find it almost impossible to re-create their tone. I think this is the main reason why people listen to music of artists from their same gender.
