In my last year of high school many years ago in a class of 32 without counting myself there were
-1 East Asian (from China)
-9 whites (one of them son of german inmigrants and the rest natives)
-The rest Mestizos and few trirracials (ike 5-6)
0 Afros, 0 Menas, 0 south Asians

Well since you bring up foreign European ancestries too, I should point out that my Catholic primary school, while pretty White, did have a lot of children of Irish and Polish descent, plus some of German, Ukrainian, Italian and Spanish descent. In the second primary school I attended, which was state secular, around a third of the children in my class (and the school more generally) were of South Asian descent, and in my class there were two Black kids too. I also befriended a Greek-descended guy, though he wasn't in my class as such.
The first secondary school I attended was majority-South Asian, plus each class usually had some Black/mixed-race students too. There were a couple of boys of partial German descent in my French class as well. The school I think also had small numbers of refugees from ex-Yugoslavia, though none in my classes. The second secondary school I attended was pred. White, though still 30-40% were South Asian-descended students. Furthermore, like I said there was a Hong Kong Chinese girl in my form group and French class, and a South Korean guy in my Latin class, as well as a Black girl and two mixed-race people in my Religious Education class. Lastly, there was a half-Arab girl in my Latin class.

At my high school, I encountered all of those groups at least once, but whites were 80-90% of the school and outnumbered them by far. During my 2 years at college, it was mainly white like my high school, but I encountered every group still except for South Asians.

Latin Americans in lower school. Later Middle Easterners and a black girl in high school. I remember getting into a fight with a brown Iraqi at age 12.

In my class there just were mestizos (Like 85%) and whites (15%)
No blacks, no asians, no MENAS

During primary, no, neither in my class nor in the whole school. (Although there were 2 christian Lebanese nuns who sometimes taught young children, but I never perceived them as being of a different ethnicity)
During secondary, I met a Nicaraguan guy in class, who had a sister in a different class. It was a fairly large institute, and I don't remember there being anyone else of a different "ethnicity".
At the university, it depends on what university or in what degree, and at what time but basically many South American( from wealthy families or scholarship holders (¿becados?)).
