I have had some good tripe and some bad tripe. It is more about how it has been prepared rather than anything else.
Don't forget, I'm the liver and bacon guy.
The things I steer clear of are the weirdass seafoods. I have a shellfish allergy, so I can't eat shrimp and lobster.
And I know too much about biology to eat things like sea cucumbers and mollusks.

Have you ever made Rumaki? I'm not talking that deep-fried perversion that sometimes is part of a poo-poo platter. It is a bit of chicken liver and half a water chestnut wrapped in a strip of bacon skewered and cooked. If you take it to a party, it will confuse the most adamant liver hater.
If you bring the dips as well, no one will notice that the meaty one between the black bean dip and the guacamole is actually headcheese.
