There's a few of these examples in South Asia.
Balochis and Sindhis are lighter than Biharis, Gujarati, Uttar Pradeshis and other groups despite being more Southern. This is because of much higher Zagros present within Sindhis and Balochis compared to the Central indian pops along with climate adaptation.
On that note, I'd say Gujaratis are a bit lighter than Biharis and Uttar Pradeshis as well as other Central Indians. This is probably because of climate adaptations because otherwise genetically they're not that extremely different but Gujarat has a more coastal climate and a more arid one. Could be because of different SAHG strains as well.
Banglas and Assamese Indo-Aryan populations are lighter than Biharis, Uttar Pradeshis and other Central Indians. This is mainly because of the 15-25% Tibeto-Burman and the different SAHG strains. This is a good example because folks from Chittagong are very southern geographically but still lighter.
I think even within the context of South India and Central India, there are some Southern Indian populations like the Todas Kotas and other groups in that region near the coast in Kerala or Goa that are lighter than different Central Indians despite being more Southern.
