They were not talking this way when they claimed Khan title when they were fighting with Ilkhan empire .They were claiming they come from Oguz noble clan Kayı .
According to Turk state traditions only noble klan chiefs can take Khan title .
For same reason Tamerlane is not titled as Khan, but "Emir" ( commander , leader)

No , rather I say they lost the connection with their roots and they had a hard time with managing those nomadic Türkmen tribes once they settled their state because their sedantery donkeys were easier to manupulate then wild Turkmen horses.
They preferred obedient peasants and their loyal vassals over unruly nomadic tribes .Many Turkmens were sided with Timur not with Ottomans .Ottomans were seeing them pain in the ass .
For example Kara Tatar tribe switched to Timurs during the battle ,left Ottomans in a bad shape while Serbian soldiers fighting Ottoman side all died .These type of chaotic nomad behaviors were not something Ottomans want to deal.

No matter if they called themselves ''turk'' or not...Kemal Ataturk was a great man an did a great job for the rebirth of Turkey after Ottoman dissolution. He saved the country from franco-britannic colonialism and even from islamic extremism.
