There are plenty of books evoking people of lower conditions, for example peasants. This is for example an article on peasants in XVIIth century French literature: https://www.persee.fr/docAsPDF/caief...m_9_1_2112.pdf
And you know what? It is even the real peasant patois that appears in the mouth of the peasants of some great authors' books. For example, the peasants in Moličre's books speak the real patois from Ile-de-France, so he must have frequented/observed/studied them quite well...
