I have a new pet soup that I made up but is loosely patterned after a few Portugese soup recipes I've seen....it has chicken or turkey sausage (your choice), onion, garlic, cream of chicken soup, chicken broth, half n half, kale, collard greens, and cabbage....all spiced according to whatever I'm in the mood for. It's YUMMY.

I found this really good fresh tomato soup recipe which I made a couple of months ago...I put about four or five whole tomatoes (not chopped) in with some chopped onion, chopped carrot, and chopped green pepper to add flavor, and covered with just enough cold water on top of the veggies. I cooked it on a low simmer for hours, until the tomatoes fell apart into little pieces on their own.
With enough salt, it's a very nice, simple soup.
You could also do half chicken broth/half water.

I LOVE soup!
I'll have to post a recipe I have for my famous 'beans and greens' soup later in the season, when it warms up enough to have some spring greens growing.
