Group consolidation above all. "Chosen" is another element of creating a common identity just like religion, romantic nationalism, practices that change physical attributes - circumcision, cranial deformation to name a few and symbolic rituals (baptizing). All these create an illusion of uniqueness and bring people together serving as societal glues for more efficient ruling, subordination and wars. Easier to dehumanize others and make your own members less reluctant to kill others.

Not an expert on the topic, but I think the term is a reference to being chosen by God to convey his laws to all mankind.
The Bible was written by Jews, and "Jesus" and his twelve apostles were Jewish.
