Actually they were not elite soldiers, but foot soldiers at most. In the Battle of Las Navas de Tolosa in the early 13th century the Almohads chained entire rows of black slaves/fighters at the first lines of the front so that they wouldn't run away and to impress the adversary. Episodes like this must have contributed to the black Moor myth.

The totemic meaning of nigger heads on blazons and flags shall not be misunderstood.
Human figures are very seldom shown in heraldry, and almost never as a self-representation.
A very rare exception is king Erik the Saint on Stockholm's coat of arms :
Most often, a human shape is shown as a trophy, like a vanquished and tamed wild beast (eagle, lion, leopard etc.) whose force has been taken hold of.
An example is Swedish Lappland's coat of arms: not a self-representation of Saamis, but a defeated savage:

the Sardinian flag is also a reminder of over 1100 years of resistance against Muslim attacks, every time they tried to conquer or to attack our island they always turned back with broken bones, not even the Romans were able to conquer the whole island, there was a vast area of inner Sardinia which was out of Roman control and was surrounded by a fortified Limes and military settlements held by a full Roman legion during the whole imperial period

The flag of Sardinia is the Cross of Alcoraz, a St. George cross with 4 beheaded Moors, which was also the flag of the Kingdom of Aragon. Why there are they depicted as black? Because eventhough only a minority of Moors were actually black, in Middle Ages the only known blacks were Muslim, so blacks were considered to be by default Muslim and unique of them. Besides, darkness is related with evilness, so the designer of the coat of arms decided to depict the 4 heads as blacks.
In other cases they are not shown as black:
