I think, if Ukrainian has Polish ancestry - he must know that, because assimilation of Poles became perceptible only in 20 century. There are no village or town, all inhabitants of which suddenly became Ukrainians and forgot that they had been Poles.

Have you deleted his contacts? Or do you remember if his surname was Ukrainian? He looks like Czech or German.

these are groupings based on genetic differences.

"Ukrainian" includes all individuals from the rest of Ukraine. This isn't an artficial all-Ukrainian average, it's the average of the main Ukrainian genetic cluster.

At this moment I have found about two hundred Gedmatch kits with Ukrainian surnames. I started to connect with them by email in order to find out if they are Ukrainians by all their grandparents. But this is a very long process. From time to time I will post some checked results.
